  • 4 egg whites
  • ¾ cup parmesan cheese
  • salt and pepper to taste

Instructions

  • Preheat oven to 275°F. Grease a baking sheet and lightly dust with flour.

  • Whip egg whites until they form stiff peaks.

  • Gently fold in cheese and seasonings.

  • Scoop 1 tablespoon amounts onto the prepared baking sheet and bake for 30 minutes. Meringues should be slightly golden on top when done.

  • Turn off oven and leave the door open to let the meringues dry out for 30-60 minutes.

Notes

Make sure to gently fold in the cheese as you don't want to deflate the air bubbles.

Leaving the meringues in the oven with the door open lets them completely dry out on the inside. This will also stop them from cracking due to sudden temperature changes.
