Try not to eat them all before you’re done making them.

Easy No-Bake Peanut Butter Balls (A.K.A Truffles)

Servings: 50 truffles (party size!)

Ingredients

  • 2 cups creamy peanut butter
  • 3/4 cup butter (room temperature)
  • 3-4 cups powdered sugar
  • 2 (1 pound) packages chocolate candy coating (I like CandiQuik)

Instructions

  • Mix the peanut butter and softened butter in a bowl until well combined.

  • Slowly mix in the powdered sugar until the mixture is firm enough to stick together into one large ball (the type of peanut butter you use and humidity level in the air will determine how much powdered sugar you need to make it firm).

  • Cover the mixture and let sit in the refrigerator for about 30 minutes.

  • Shape the now cold peanut butter mixture into 1 inch balls and place them on a wax paper lined baking sheet (use a cookie dough scooper if you want them to be uniform in size). Refrigerate again once finished. The colder the peanut butter balls are, the easier they are to dip.

  • Melt the chocolate according to the package directions. I prefer to microwave it in a silicone bowl.

  • Using a fork, dip the peanut butter balls into the melted chocolate one at a time. Let the excess chocolate fall back into the bowl before placing them back onto the wax paper.

  • Once finished with all that dipping, let them harden at room temperature, and then store them in the refrigerator until ready to serve.

Notes

  1. You can also replace some of the powdered sugar with crushed Rice Krispies cereal or crushed graham crackers to make them less rich.
  2. Turn these little guys into what they call "Buckeyes" by simply leaving the top portion of the peanut butter exposed.
  3. Feel free to make them pretty by topping them with sea salt, sprinkles or an extra drizzle of chocolate.
  4. Use any leftover chocolate to dip pretzels, fruit, nuts or anything else you have laying around.
  5. If you've ever done any chocolate dipping, then you know that the chocolate slowly hardens and has to be reheated, but the texture slowly changes in the re-heating process. To remedy that, place your chocolate bowl in a shallow bowl of hot water after it's melted to keep it warm during the dipping process.
  6. Watch the video below to see how to make the dipping process smooth and painless. We wouldn't want any ugly balls!

FAQs

Why are my peanut butter balls so sticky? ›

First, make sure you're using regular peanut butter (rather than the natural peanut butter that's more runny). If it's too sticky still, you can simply add a little more powdered sugar until it's a nice consistency for rolling into small balls. Do Buckeyes need to be refrigerated?

Why is there white stuff in peanut butter? ›

Occasionally, you may find an oily substance at the top of your jar of natural peanut butter. This is the oil separating from the natural peanut butter.

How do you make a perfect round truffle? ›

For perfectly round truffles, quickly roll each one between the palms of your hands. You have to do this quickly, or the chocolate will become too soft.

How do you roll chocolate truffles without melting them? ›

Roll the balls between your palms to smooth them into even spheres. Use disposable gloves to prevent your hands from melting the chocolate. Or, dip your hands in ice water every few minutes as you roll the truffles. If the chocolate begins to melt too much, return to the fridge.

What are truffle balls made of? ›

Chocolate truffles are a deeply indulgent chocolate treat made from chocolate and cream. They're essentially balls of chocolate ganache. And great news: they sound so much fancier than they are to make! If you're making these around Valentine's Day, I love coating them in pink and red sprinkles.

How do you make balls less sticky? ›

Consider using deodorant or a hydrating lotion… but specifically formulated for your balls. You can also use regular deodorant. Just make sure to test how your skin reacts to it. The skin of your balls is incredibly sensitive, so apply a small amount of deodorant to a patch of skin and observe the results.

How do you make peanut sauce less sticky? ›

When making sauces with things like peanut butter, almond butter, tahini, etc., oil is the thing to add to help thin it out. For peanut butter, you could add peanut oil, canola oil, toasted sesame oil, or a light olive oil with a more neutral taste (or perhaps others).

Why are my protein balls sticky? ›

Why are my protein balls so sticky? If for some reason the batter is sticky or too wet and not coming together, there is too much liquid and not enough binder. This can happen depending on the protein powder you are using. You can either add more protein powder or some kind of flour.
